We prepared wapiti for dinner; in the form of meatloaf with smoked dried tomatoes and artichoke hearts. That's not all, but the point is my husband had shipped us some 150 pounds (from a 700 pound animal) of Cervus canadensis from Colorado this year. I'm enjoying every pound so far. He also brought the rack; a five by five. We have no space left in the house, so we hung it on the barn. Horace might should start buying my work. So should all hunters or their spouses or their "little" ladies. The paintings are smaller and more manageable and attractive than the kill (or the ladies?). I guess you can't eat artwork, but it'll last forever.
